Muriwo Une Dovi (Vegetables & Peanut Butter)
1 tsp...........Oil
1 small........Onion
2-4 cloves....Garlic
1 small........Carrot
¼ tsp...........Salt
1 Package....Mufushwa
3-4 cups.......Water
¼ cup..........Peanut Butter

Heat oil and add onion, garlic, and carrot cooking until soft.

Add salt, Mufushwa, and water bringing to a gentle simmer, covered, for 15 minutes.

Add peanut butter, blend into a smooth sauce and cook 10 more minutes for best results.

Serves 6-8
Mufushwa (Shona for sun dried vegetables) is a traditional Zimbabwean dish that is usually accompanied by sadza.
This delicious vegetable peanut sauce is great over rice, quinoa, millet, or any side dish.
Kale Banana Bread
2...............Eggs
1/3 cup.....Oil
2 Tblsp.......Milk
¼ cup........Water
2-3............Bananas mashed
1½ cup.....Sun Kissed Kale Strips

Mash the bananas and mix in the rest of the above ingredients.
Let sit for 15 minutes. -
In separate bowl mix together:
1 cup.........All Purpose Flour
½ cup........Whole Wheat Flour
2/3 cup......Sugar
1 ¼ tsp.......Baking Powder
½ tsp..........Baking Soda
½ tsp..........Salt
1................Zest of an Orange

Mix together wet and dry ingredients.

Grease a 9 x 5 loaf pan.

Bake at 350 for 50-60 minutes.
